Arugula Microgreen Quinoa Salad

Ingredients:
- 1 cup cooked quinoa, cooled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard
- 2 large handfuls arugula microgreens
- Salt and pepper to taste
