Ingredients:


  1. 1 cup cooked quinoa, cooled
  2. 1/2 cup cherry tomatoes, halved
  3. 1/4 cup crumbled feta cheese
  4. 2 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard
  5. 2 large handfuls arugula microgreens
  6. Salt and pepper to taste
