Broccoli Microgreen Egg Scramble

Ingredients:
- 4 large eggs
- 2 tablespoons milk or cream
- 1 tablespoon butter
- 1/4 cup shredded cheddar cheese
- 1 large handful broccoli microgreens
- Salt and pepper to taste
Directions:
- Crack eggs into a bowl, add milk, salt and pepper. Whisk until combined.
- Melt butter in a non-stick skillet over medium-low heat.
- Pour in egg mixture. Gently fold with a spatula as curds form, cooking slowly for 2–3 minutes.
- When eggs are just set but still creamy, remove from heat. Stir in cheddar cheese.
- Plate and top generously with broccoli microgreens. Serve immediately.
