Ingredients:
- 1 cup cooked brown rice or quinoa
- 1/2 cup canned chickpeas, rinsed
- 1/2 cup shredded carrots
- 1/2 cucumber, sliced
- 2 tablespoons tahini, 1 tablespoon lemon juice
- 1 large handful mellow mix microgreens
- Salt and pepper to taste
