Broccoli Microgreen Egg Scramble

Ingredients:


  1. 4 large eggs
  2. 2 tablespoons milk or cream
  3. 1 tablespoon butter
  4. 1/4 cup shredded cheddar cheese
  5. 1 large handful broccoli microgreens
  6. Salt and pepper to taste

Directions:


  1. Crack eggs into a bowl, add milk, salt and pepper. Whisk until combined.
  2. Melt butter in a non-stick skillet over medium-low heat.
  3. Pour in egg mixture. Gently fold with a spatula as curds form, cooking slowly for 2–3 minutes.
  4. When eggs are just set but still creamy, remove from heat. Stir in cheddar cheese.
  5. Plate and top generously with broccoli microgreens. Serve immediately.
